Life and How it can catch you off Guard.

I went in not thinking anything would be said just a typical OBGYN appt. I hadn't gone in a long time and I knew I would have to get a mammogram. Ok gonna be 40 so of course that is to be expected. I did have to have a mammogram and oh so much more. I had a lump and the long and the short of it is I was scared but you know what its ok. I had to have a lumpectomy and it came back with nothing! YAY so awesome! Then I got more news. I had hyperdisplaysia. I said what and he said precancerous cells on my cervix and he said they needed to be removed. I said ok and had to have surgery to remove those called a leep. That was scheduled and done. 2 weeks later I went back in and was told by this dear DR he couldn’t get all of the cells and that it meant more extreme measures. I said and that would be…

He said “Hysterectomy, this means no more babies for you.” He looked over his glasses and asked “Do you have any questions?” I said there is not other option he said no not without the risk of getting cancer. I said ok schedule it then and then got my next apt scheduled and got out of that office as fast as I could. I cried as I called Bernie and told him. He cried as well. We were lost what do you do then, other then deal right.  

I did it. I got it done, I was strong, scared and determined I was gonna be ok. We both kinda wanted to have a baby together but we were both ok since we have children already!!!  This was only the begining of a ride that we had only just begun.

I had my Hysterectomy and am 4 weeks out from my surgery.  Today is actually my first day back to work and it feels like I have never left. 

Recovery was painful but not to bad just made me feel pretty whimpy. I did have the procedure done laproscopically so it was a lot easier then it would have been if they had to actually cut into my stomach, like they do when having a c-section.  4 weeks out laughing and coughing are really the only thing that bother me!!! I would have to say its been pretty crazy but I am looking forward to no more periods or pms. I will not be missing those at all!!!

In total in the last 2 months I have had 3 surgeries and Praise God they have found no cancer. I am on my way to recovery and things are going much more positive for my body! YAY!!!

Been going through a lot and am so blessed to have my Nestie Besties!

As most friends and family knew I have had to undergo some fun stuff as of late and my girls. All of my special May Sisters have been a wonderful support. An endless supply of laughs and encouragement every day since I met them. I am very blessed by these amazing group of women. Anyway I could go on and on about them for a really long time.

SO.... they all got together to send me an amazing gift basket/care package which I recieved on Saturday. They made both my hubby and I tear up and made me feel amazing.

2011 Graduation Portfolio! Photo Album

I started with a blank portfolio, by Sara's Surfaces and got some glitter, glue, stickers, ribbon and graduation paper. I am now covered in glitter but had a lot of fun doing it. Here is what I created for my daughter who will be walking in June 9th and finishing her high school career.

Easter 2011



It was a great time! I made Lemon Cupcakes with a Lemon frosting with Little Easter Nests to make it just a bit more fun!  




I also made bacon stuffed jalepenos yummmy!!!! I forgot to do a finished product picture. I am making more this weekend so I will update it!





Kids Baskets What more could you ask for???? God Blessed us he truly did!!!

High Hat cupcakes Peanut butter frosting & Sour Cream Chocolate Cupcakes

Thanks to  ACup full of Cake http://acupfullofcake.blogspot.com/  I did not do as well as she did but yet they were still amazing and this peanut butter frosting was by far the best I have ever had!!! I have read this blog for a while and she is an amazing baker!!!











Chocolate Sour Cream Cupcakes recipe
(adapted from Cupcakes! by Elinor Klivans)
Ingredients
3 ounces unsweetened chocolate, chopped
1 c. unbleached all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. unsalted butter, at room temperature
1 1/4 c. sugar
2 large eggs
1 tsp. vanilla extract
1/2 c. sour cream
1/2 c. milk

Directions
Put chocolate in a heatproof bowl or the top of a double boiler placed over, but not touching, barely simmering water.  Stir until the chocolate is melted and smooth.  Remove from the water and set aside to cool slightly.
Sift the flour, baking powder, baking soda, and salt into a medium bowl and set aside.
In a large bowl, using an electric mixer on medium speed, beat the butter and sugar until smoothly blended and creamy, about 2 minutes.  Stop the mixer and scrape the sides of the bowl as needed during mixing.  On low speed, mix in the melted chocolate.  On medium speed, add the eggs one at a time, mixing until each is blended into the batter.  Add the vanilla and beat until the mixture looks creamy and the color has lightened slightly, about 1 minute.  Mix in the sour cream until no white streaks remain.  On low speed, add half of hte flour mixture, mixing just to incorporate it.  Mix in the water.  Mix in the remaining flour mixture until it is incorporated and the batter looks smooth.
Preheat oven to 350 degrees.  Fill muffin cups with cupcake liners with about 1/3 c. batter.  Bake about 15 minutes or until toothpick inserted in the center comes out clean.  Cool 10 minutes on wire rack and turn out to cool completely.  Yields 18 cupcakes.


Peanut Butter Frosting Recipe

Ingredients
½ cup softened unsalted butter
1 cup creamy peanut butter ( skippy etc not natural pb)
2 cups powdered sugar
¼ or so heavy cream

Directions
combine butter with peanut butter and cream add powdered sugar ( mixture will be stiff) then add the heavy cream a little at a time until you get the consistency you like for spreading or piping. Try not to eat it all before it makes it onto your cake or cupcakes. Its seriously good

you can also use crunchy peanut butter


Chocolate Coating Recipe

Ingredients
2 cups (12 ounces) semi sweet chocolate chips or baking bar chopped up
3-2 tsp canola oil

Directions
Melt chocolate in a double boiler or in a heat proof bowl set over a pan of simmering water ( but not touching) Stir frequently. Once the chocolate is smooth mix in the canola oil and transfer to a smaller, deeper bowl. One that will be better for dipping. Let cool for 10-15 min before dipping. Enjoy!!


Chips & Salsa












Making Salsa is one of those things I enjoy doing at the warmer weather approaches. The only thing that is not shown here is I do add 1 can of tomato sauce. Everything else is shown.
2 Jalepenos Peppers
2 Habeneros Peppes
2 Anaheim Peppers
1 Medium Onion
Green Onion diced at the end of blending
Bundle of Cilantro
10 to 12 Roma Tomatoes

Been Gone Along Time!

Ok so here I am thinking now that I am gonna have more time on my hands I am gonna have to start up working on this blog agian. So I will update a little bit. Since October I have had a lot of changes in my life.

1. My oldest by 8 minutes has left the nest and moved off to Oregon which is a bit sad but it was time for her to fly out of the nest and see what life is about. It has been hard on me and I miss her like crazy but there was nothing more I could do she is 18 and needed to test her wings. She is trying to continue with home school through conne.ctions acad.emy and hopefully will still graduate.

2. I stepped down from my position at work so that I could work from home so now I am enjoying my first week at home and realizing I can start baking, cooking & crafting more and this blog will be a reflection of that. I am so happy that I am going to be able to start sharing that with everyone so my mom can see what I am doing. I might even post some of my mom and my sisters stuff on here as we are all crafting fools haha. All using different mediums

3. Jessica is enjoying her relationship with Nesto he has been the love of her life since her freshman year in high school and she is trying to survive her final time as a senior and Loving (note the sarcasm) Algebra 2. She is going to be very happy graduating and having a bit of freedom. I know that when I was her age I couldn't wait until I was free of high school then I felt kinda lost. Like I could start my life but how. I figured it out and I know she will to. She loves me being home now as well.

4. Joanna is still doing well in school and has decided that she wants to try out make up. So I went out and got her the new May.bel.line Line so she could see what it was all about. Wow can't believe my baby is in 7th Grade, 13 and wanting to try makeup. What the heck, how did that happen? Still focused on being a lawyer and doing anything she can to make her transcripts look good so she can do all she wants where she wants in school. Oh how proud I am of her. She is also enjoying me being home.

I hope this finds everyone well and hopefully I will start posting on this a bit more as I start to show all of my crafts and wow in 2 months it will be my 1st wedding anniversary with a wonderful man that God brought into my life at a perfect time to show me how wonderful being the other half of someone is. YAY!!!
