Stuffed Jalepeno's Wrapped in Bacon & Chocolate Cupcake Filling Also plus Cream Cheese Frosting

15 Jalepeno's cut in half and cleaned out of all seeds and veins
2 packages of cream cheese
3/4 finely shredded chedder cheese
1 package of bacon cut in half
1/2 teaspoon of seasoning salt


Bake at 350 degrees, 20 to 25 minutes

Enjoy!!!!


Just for fun I also made chocolate cupcakes with creamcheese frosting, and chocolate cream filling forgot take pics when I was making them... all the way through

Chocolate Pie Filling or for me cupcake filling

4 Tablespoons of Cocoa
3/4 Cup of Sugar
5 Tablespoons of Flour
1/4 Teaspoon of Salt
1 1/2 Cups of Milk
2 Egg Yolks beaten slightly
1Tablespoon Butter
1/2 Teaspoon Vanilla  

Mix your sugar, flour, salt, cocoa, eggs and milk with your wisk. Cook while stirring on medium until it bubbles and thinkckens, about 5 to 10 minutes. If it starts to become lumpy just whisk the lumps out, when it starts thickening add vanilla and melted butter. Whisk until it is the desired thickness that you want. Take off the heat.

If using this for cupcakes I pour imediately into a glass bowl and place plastic wrap over it, not over the bowl but on the actual filling so that air can't get to it. I do this so it doesn't make a skin on it as it cools as I find that gross. Once it is cooled I place it into a piping bag and fill my cupcakes.

If you are making it into a pie then you place right into the prepared and prebaked pie shell.



Cream Cheese Frosting

3 Sticks Salted Butter
1 Brick Cream Cheese
2 Pounds Powdered Sugar
1 Tsp Vanilla
3 Tbsp Milk Aprox

Mix/Whip Butter and Cream Cheese, add Vanilla, slowly add Powdered Sugar, as it thickens add just 1 Tbsp of Milk and continue to add Powdered Sugar, Make it to the desired thickness you want by adding just a touch more Milk. Then frost!
